MINI BEEF WELLINGTON BITES

with Dijon sauce

WHY YOU SHOULD MAKE THESE BITES

They're simple & elegant. The recipe is straight-forward - no wrapping puff pastry! The bites are a big crowd-pleaser. Perfect for holidays & get-togethers!

INGREDIENTS

- dijon - sour cream & mayo - garlic - salt & pepper - mushrooms & shallots - butter - rosemary - red wine - prosciutto - puff pastry - flour - eggs - Chairman’s Reserve Platinum® Angus beef tenderloin - oil - chives

First, combine the Dijon mustard, sour cream, mayo, garlic, & salt until smooth. Cover & refrigerate for later.

Pulse the mushrooms, shallots, and garlic in a food processor until the veggies are finely chopped.

Sauté the duxelles in butter until soft. Add rosemary, salt, & pepper. Deglaze with red wine.

Then, stir in the chopped prosciutto. Cool.

Cut the puff pastry in squares & brush with egg wash. Spoon the duxelles in the center & bake until golden-brown.

Sear the Chairman’s Reserve Platinum® Angus beef tenderloin cubes. Add butter, rosemary, & garlic & cook until medium-rare.

Place a beef cube into the center of each pastry. Add a dollop of Dijon sauce & sprinkle the bites with fresh chives.

SERVING IDEAS

Serve with other appetizers & snacks.

Enjoy with horseradish sauce, Dijon sauce, or peppercorn sauce.

Eat as a light meal with salad or veggies.

RECIPE TIP

Make sure to sear the Chairman’s Reserve Platinum® Angus beef tenderloin cubes to lock in all of those flavorful juices! The tenderloin cubes will cook quickly.
