BRISKET BEEF STEW WITH WILD RICE

INGREDIENT LIST

Beef brisket Salt & pepper Oil Flour Butter Carrots, celery, & onion Garlic Rosemary & thyme Bay leaf Tomato paste Red wine Beef broth Worcestershire sauce Wild rice Peas

01 SEAR

Pat the brisket dry on both sides. Then, season the beef with salt & pepper. Heat the oil until it's very hot. Sear the brisket. Then, cut it into cubes & toss with flour.

02 SAUTÉ

Melt the butter and add the carrots, celery, & onions. Sauté until the veggies are softened. Spoon the veggies into a bowl. Set aside.

03 BRAISE

Add the red wine, beef broth, bay leaf, Worcestershire sauce, and brisket. Braise in the oven until the brisket is very tender, about 2 1/2-3 hours.

04 SIMMER

Once the brisket is tender, transfer the pot to a stove. Add the rice & veggies. Simmer until the rice is tender. Add the frozen peas & stir until warm. Enjoy!

PRO TIP!

To make searing quicker & easier, I recommend searing 3-4 brisket steaks before cutting the beef into cubes. The beef still gets nice & browned and never steams!

SLOW COOKER

You can also make this beef and rice soup in a slow cooker. Just add the rice with the beef & let it simmer all day in the crockpot!

CAN I USE OTHER CUTS OF BEEF?

Yes! If you can't find brisket flat, feel free to use chuck roast or sirloin instead!
