BAKED CARDAMOM CARROT CAKE DONUTS

SOFT, FLUFFY, & SPICED

These donuts are  baked instead of fried. They're the best carrot cake donuts! The recipe is super easy! This is a one-bowl recipe.

- flour - baking powder & soda - salt - spices - cardamom, cinnamon, & nutmeg - white & brown sugar - buttermilk & milk - canola oil - vanilla - eggs - carrots - pecans - butter - powdered sugar

S T E P 1

Whisk together the brown sugar, sugar, buttermilk, canola oil, vanilla, and egg until smooth.  Add the shredded carrots and chopped nuts until combined.

Add the flour, baking powder, baking soda, cardamom, cinnamon, nutmeg, and salt. Stir just until the batter comes together - don't over-mix!

Next, spoon the batter into a large piping bag (or a plastic bag with the tip cut off). Pipe the batter into the donut pan. Bake at 350°F for 10 minutes.

Then, add the powdered sugar, cardamom, & milk and whisk until the icing is smooth.

Dip each cooled donut halfway into the glaze, letting the excess glaze drip off. Decorate with pecans, sprinkles, cardamom, or icing carrots.

To decorate the donuts with icing carrots, all you need is some orange icing and  green icing! It's easy - just pipe the carrots with a medium round tip and add stems with a smaller round piping tip.

RECIPE TIPS

1. Grate your own carrots. They taste much better! 2. Avoid over-baking the donuts - they should be moist. 3. Let the donuts cool before glazing. Much easier!

SERVING THE DONUTS

These donuts are perfect for Easter, Halloween, or any spring/autumn holiday. But, we also eat them year round with hot coffee - so delicious any time of the year!
