THE BEST CHEESY GARLIC MASHED POTATOES

with rosemary

WHY YOU SHOULD MAKE THESE POTATOES

They're so cozy. You can make them in advance! This recipe is simple & unfussy. Try them with different cheeses and herbs.

INGREDIENTS

- YUKON GOLD POTATOES - GARLIC - WHITE CHEDDAR - BUTTER - CRÈME FRAÎCHE OR SOUR CREAM - HALF & HALF - ROSEMARY - SALT & PEPPER

Boil the potatoes until they are fork tender. Use a ricer, potato masher or mixer to mash the potatoes until they are smooth.

Add the garlic and cheese until it's fully melted. Then, stir in the butter, crème fraîche and rosemary until combined.

Stir the half-and-half in a splash at a time until you reach your desired consistency. Season the potatoes with salt & pepper.

TIP!

Don't over-mix the potatoes or they will come out dense and gummy! Stir the potatoes just until everything is combined but still light & fluffy.

SERVING IDEAS

Enjoy them with braised pork ragù.

Enjoy them with apple pork chops, pork loin, or roast pork!

Eat them with braised chicken or pot roast.

WHAT ELSE CAN I ADD TO THESE POTATOES?

If you want to add even more flavor to your potatoes, add roasted garlic, caramelized onions, bacon, green onions, or crispy frizzled onions!
