CHICKEN CORDON BLEU WITH DIJON SAUCE

INGREDIENTS YOU'LL NEED

- Dijon mustard - Red wine vinegar - Honey - Thyme - Broccoli - Olive oil - Garlic - Red pepper flakes - Lemon - Chicken - Ham - Swiss - Salt & pepper

01 ASSEMBLE

- Place a sheet pan in the oven while it's heating.  - Combine the broccoli, oil, garlic, pepper flakes, lemon, salt, & pepper.  - Layer the chicken with ham & Swiss cheese.

02 ROLL

- Roll the chicken & secure with toothpicks. - Spread the broccoli into an even layer on the 3/4 of the sheet pan. - Place the chicken cordon bleu rolls on the 1/4 of the pan & bake.

03 BASTE

- Meanwhile, whisk the sauce ingredients together. - Baste the chicken with Dijon sauce & bake until golden. - Squeeze lemon juice over the broccoli & toss.

SERVING IDEAS

Serve this healthy chicken cordon bleu on its own or with rice, potatoes, salad, & more.

PRO TIP!

For easy rolling, buy thin chicken breasts. If you can't find thinly sliced, you can also butterfly the chicken breasts or pound them until thin with a meat mallet.
