- Place a sheet pan in the oven while it's heating. - Combine the broccoli, oil, garlic, pepper flakes, lemon, salt, & pepper. - Layer the chicken with ham & Swiss cheese.
- Roll the chicken & secure with toothpicks.- Spread the broccoli into an even layer on the 3/4 of the sheet pan.- Place the chicken cordon bleu rolls on the 1/4 of the pan & bake.
- Meanwhile, whisk the sauce ingredients together.- Baste the chicken with Dijon sauce & bake until golden.- Squeeze lemon juice over the broccoli & toss.
For easy rolling, buy thin chicken breasts. If you can't find thinly sliced, you can also butterfly the chicken breasts or pound them until thin with a meat mallet.
