SAVORY FRENCH SHALLOT SOUP

with gruyère croutons

THE INGREDIENTS

- Butter - Shallots - Salt & pepper - Garlic - White wine - Flour - Beef broth - Thyme & bay leaf - Bread - Gruyère - Parmesan - Chives

01 SLICE

Start by slicing the shallots. Peel all of the shallots and cut off the tips & stems. Flip the shallot on the flat side and cut the shallots length-wise into 1/4'' slices.

02 CARAMELIZE

Melt the butter in a dutch oven. Add the shallots & cook until they're translucent. Continue cooking over medium-low until the shallots are caramelized.

03 SIMMER

Add the garlic, white wine, flour, beef broth, pepper, thyme, & bay leaf. Bring the soup to a gentle simmer for 30 minutes.

04 CROUTONS

Toast the bread under the broiler until it's lightly browned. Top each bread slice with gruyère & parmesan & broil until melty. Serve over bowls of French shallot soup.

RECIPE SECRET

The trick to good French shallot soup is caramelized shallots! Caramelizing shallots can take a while, so take it low and slow. They should be deep golden-brown.

To deepen the flavor, use a high quality beef broth mixed with white wine. And, add herbs like thyme & bay leaves. So delicious!
