To make sure that these scones are super flaky, use very cold butter!To keep the butter cold, just pop it in the freezer for 10-15 minutes before mixing the dough.
That depends on your taste! If you like tart berry flavors, use fresh. If you want the fruit to be sweeter & chewy, then use dried cranberries instead.
