KALE AND APPLE SLAW

with honey Dijon dressing

WHY YOU SHOULD MAKE THIS SLAW

It comes together quickly. It's fresh, flavorful, & colorful. This salad is amazing with BBQ, burgers, & more. Make it for BBQs, picnics, & dinner parties.

INGREDIENTS

- KALE - RED CABBAGE - CARROTS - APPLES - SUNFLOWER SEEDS - BLUE CHEESE - RED WINE VINEGAR - HONEY MUSTARD - MAYO - GARLIC POWDER - SUGAR - OIL - SALT & PEPPER

Whisk together the vinegar, honey mustard, mayo, garlic powder, & sugar. Add oil, salt, & pepper. Set aside for later.

Add the kale, red cabbage, carrots, apples, sunflower seeds, and blue cheese to a large salad bowl. Toss to combine.

Drizzle half of the dressing over the slaw & toss. Taste and add more dressing as needed. Season with salt and pepper and enjoy!

TIP!

For the right 'slaw' texture, you will want to cut all of the ingredients very thinly. To make this easier, use a mandoline!

HOW DO I PREP & CUT KALE FOR SALAD?

To cut the kale, give it a good wash. Then, remove the leaves from the stems & slice it very thinly into ribbons.

SERVING IDEAS

Enjoy this salad with tri-tip or smoked brisket.

Use it on top of pulled pork sandwiches or even fish tacos.

Serve the slaw with roast chicken in the fall.

CAN I MAKE THIS CRUNCHY KALE SALAD VEGAN?

Yes! To make this slaw vegan, replace the honey with maple syrup. Then, omit the blue cheese or replace it with your fave vegan alternative.
