INGREDIENTS

- lemon zest - sugar - flour - cornstarch - salt - butter - egg yolks - vanilla bean paste - lemon curd

01 MAKE THE DOUGH

1. Beat the butter, sugar, & lemon zest until fluffy. 2. Add the egg yolks & vanilla. 3. Mix in the flour, cornstarch, & salt until combined.

02 ASSEMBLE THE COOKIES

1. Scoop the cookie dough and roll into balls. 2. Roll the cookie dough balls in sugar. 3. Use a teaspoon to indent the cookies.

03 FILL & BAKE THE COOKIES

1. Chill the cookies for 1 hour. 2. Fill the centers with homemade lemon curd. 3. Bake the cookies until they're set. Cool & enjoy!

PRO TIP!

Don't overfill the centers of the cookies with lemon curd or they will overflow in the oven. About 1/2 teaspoon is perfect!
