SIMPLE MIXED GREEN SALAD

with sherry shallot dressing

WHY YOU SHOULD MAKE THIS SALAD

It's super easy to make. This salad is simple but never boring! It's great for rounding out any dinner. Make it for parties or weeknights.

INGREDIENTS

- LETTUCE - SUNFLOWER SEEDS - PARMESAN - CUCUMBERS - SHALLOTS - SHERRY VINEGAR - DIJON - HONEY - LEMON ZEST - OIL - SALT & PEPPER

In a blender, combine the shallots, sherry vinegar, Dijon, honey, lemon zest, salt, and pepper. Blend until smooth.

While the blender is running, slowly drizzle the oil into the blender until the dressing is smooth & creamy.

In a large bowl, combine the butter lettuce, green leaf lettuce, cucumbers, sunflower seeds, and freshly-grated parmesan.

Drizzle the salad dressing over the lettuce. Using tongs, toss the salad. Taste and add more dressing, salt, & pepper if needed.

TIP!

For smooth & creamy dressing, add the oil just a bit at a time. You want the dressing to be fully emulsified or it will break.

SERVING IDEAS

Enjoy this salad with steak or smoked tri-tip.

Serve this salad with pasta, soup, bread, or any main meal.

Eat this salad with pizza or sandwiches.

CAN I MAKE THIS RECIPE WITHOUT A BLENDER?

Yep! Just finely dice the shallots and mix them with vinegar, Dijon, honey, lemon zest, salt, & pepper. Drizzle in the oil while whisking constantly. Enjoy!
