CRISPY SMASHED FINGERLING POTATOES

with rosemary garlic butter

WHY YOU SHOULD MAKE THESE POTATOES

It's the easiest side dish. They are full of flavor. The potatoes are crispy & creamy. Make these for dinner parties, holidays, & more!

INGREDIENTS

- FINGERLING POTATOES - KOSHER SALT - BLACK PEPPER - OLIVE OIL - GARLIC POWDER - ONION POWDER - PAPRIKA - CAYENNE - BUTTER - GARLIC - ROSEMARY

Place the potatoes in a large pot. Add water & salt. Boil until the potatoes are fork tender. Then, drain & let the potatoes dry.

Toss the potatoes with the oil, spices, salt, & pepper. Then, use a drinking glass or ramekin to 'smash' the potatoes. Roast.

Place the butter, garlic, and rosemary in a small bowl. Microwave until the butter is melted. Stir the butter well.

Spoon the garlic butter over the potatoes. Bake for another 5-10 minutes until the garlic is fragrant. Sprinkle with salt.

TIP!

For super crispy potatoes, the potatoes need to dry completely! Let them dry in the colander for 3-5 minutes, shake the colander, & dry another 3-5 minutes.

SERVING IDEAS

Enjoy them with steak or smoked tri-tip.

Eat the potatoes with pork chops, pot roast, or beef bourguignon.

Eat them with roasted or grilled chicken.

CAN I USE BABY POTATOES INSTEAD?

Yes! If you can't find fingerling potatoes, you can also use new potatoes (a.k.a. baby potatoes) or any other small potato you like.
