BACON & CORN FRITTERS

WITH CHIPOTLE AIOLI

YOU'LL LOVE THIS RECIPE BECAUSE IT'S...

- simple to make - full of flavor with cheese, bacon, & green onions - delicious with chipotle aioli! - great for a side or appetizer

INGREDIENTS

- bacon - flour - baking powder - sugar - salt & pepper - garlic powder - smoked paprika - eggs  - milk - corn - green onions - cheddar - oil - mayo - lemon - chipotles - garlic

01 MAKE THE BACON

1. Lay the bacon on a parchment-lined sheet pan. 2. Bake at 400°F for 15-20 minutes. 3. Finely chop the cooked bacon.

02 MIX THE BATTER

1. Whisk the eggs & milk. 2. Stir in the corn, bacon, green onions, & cheese. 3. Add the flour,  baking powder, sugar, & spices until mixed.

03 FRY THE FRITTERS

1. Heat the oil until hot. 2. Add a scoop of the batter & flatten with a spatula. 3. Cook until golden-brown, 2-3 minutes per side.

04 CHIPOTLE AIOLI

1. Add the mayo, lemon juice, chipotle peppers, garlic, salt, & pepper to a food processor. 2. Blend until smooth. 3. Serve with the fritters.

PRO TIP!

For the best flavor, use fresh corn! You can also use frozen corn, but fresh corn gives the fritters a sweet flavor.

MAKE SURE THE OIL IS HOT ENOUGH! THE BATTER SHOULD SIZZLE WHEN IT HITS THE PAN.

STORAGE

Refrigerate the fritters in a container for 2-3 days. You can also freeze the fritters for up to 3 months & enjoy them later!
