EASY & FLUFFY COFFEE CUPCAKES

with vanilla coffee buttercream

WHY YOU SHOULD MAKE THESE CUPCAKES

The cupcakes are soft & moist. The buttercream is super light & fluffy. Make them for parties, BBQs, get-togethers, & more!

INGREDIENTS

FLOUR BAKING POWDER SALT BUTTER SUGAR EGGS SOUR CREAM OIL VANILLA MILK INSTANT COFFEE POWDERED SUGAR COCOA POWDER

Cream the butter & sugar until it's light & fluffy. Add the eggs, sour cream, oil, & vanilla bean paste. Stir the mixture well.

Add the flour, baking powder, salt, milk, & instant coffee in 2 batches. Stir just until it's combined. Don't over-mix!

Divide the batter between cupcake liners. Bake the cupcakes until they're cooked through and an inserted toothpick has a few moist crumbs on it.

Let the cupcakes cool completely before frosting.

Beat the butter, powdered sugar, milk, vanilla, salt, instant coffee, & cocoa. Whip the frosting until it's very light and fluffy, about 5 minutes. Frost the cupcakes.

PRO-TIP

Instant coffee is the secret ingredient in these cupcakes! You can find it in the baking aisle or coffee aisle of the grocery store. Look for a good-quality coffee for the best flavor!

CAN I USE BREWED COFFEE INSTEAD?

Sadly, brewed coffee will not work in this recipe. It won't have enough flavor & will make the batter too runny.
