TEMPURA FRIED CHEESE CURDS

WITH SRIRACHA MAYO

INGREDIENTS YOU'LL NEED

- cheese curds - cake flour - club soda - kosher salt - vegetable oil - mayo - Sriracha - garlic

01 SRIRACHA MAYO

1. In a small bowl, combine the mayo, Sriracha, and garlic. 2. Whisk the mixture until smooth. 3. Set aside for later.

02 MAKE THE BATTER

4. Add the cake flour to a bowl. 5. Next, add the Kosher salt and club soda. 6. Whisk everything together until you have a thick batter.

03 DIP!

7. Heat the oil on the stove top until it reaches 375°F. 8. Once the oil is hot, dredge each cheese curd in the batter. 9. Let any excess batter drip off of the cheese curds.

04 FRY

10. Working about 6 at a time, drop the curds into the hot oil. 11. Fry the cheese curds until they're golden brown. 12. Keep extra cheese curds warm in the oven while you're frying.

THAT'S IT!

Serve the cheese curds immediately with the Sriracha mayo. They're also delicious with ranch dressing or on their own. Enjoy with cold beer!

PRO TIP!

To keep the cheese curds from melting, freeze them before you batter and fry them. They will still get melty but won't seep out of the batter!
