GRILLED HALLOUMI SANDWICHES

with veggies & herb sauce

YOU'LL 🖤 THESE VEGETARIAN HALLOUMI SANDWICHES

- They're easy & flavorful. - They're vegetarian but even meat-eaters will love them. - The sauce is spicy & fresh. - You can use any veggies or herbs.

THE INGREDIENTS

- Shallots - Garlic - Jalapeños - Herbs - Lemon - Oil & vinegar

- Halloumi - Veggies - Oregano - Buns - Mayo - Salt & pepper

01 SPICY HERB SAUCE

Pulse the shallots, garlic, & jalapeños until they're finely chopped. Add the herbs, lemon juice & zest, vinegar, olive oil, salt, & pepper. Blend until the sauce is smooth. 

02 GRILL

Next, brush the veggies & halloumi with oil. Season with salt, pepper, & oregano. Grill about 3-6 minutes per side until the veggies are soft & halloumi is lightly browned.

03 ASSEMBLE

Spread the herb sauce on both sides of the buns.  Then, stack a few slices of halloumi, zucchini, & peppers (or veggies of choice) on the buns. Sandwich together.

CAN I MAKE THIS ON THE STOVE?

Yes! If you don't have a grill, you can make this in a pan instead.

Just sear the veggies and halloumi in a pan with a bit of oil over medium heat.

TIP!

If you don't have time to make the spicy herb sauce, try using store-bought pesto or chimichurri instead. Both will taste great on these sandwiches!

- SWEET POTATO FRIES - POTATO CHIPS - FRESH FRUIT (MELON, BERRIES, STONE FRUIT) - GREEN SALAD - PASTA SALAD

CAN I USE DIFFERENT CHEESE?

Yes! If you can't find halloumi, try paneer or grilling cheese. You can also just melt mozzarella  on the buns. To make it vegan, try using tofu instead of halloumi cheese.
