RAW CARROT SALAD

with feta & shallot vinaigrette

WHY YOU'LL 🖤 THIS SALAD

- It's fresh & simple. - The recipe is healthy & delicious. - It goes great with all kinds of main meals. - The salad is the perfect side dish for BBQs, parties, & more.

THE INGREDIENTS

- Shallots - White wine vinegar - Yogurt - Dijon  - Olive oil

- Honey - Carrots - Feta - Pistachios - Parsley - Salt & pepper

01 SHALLOT DRESSING

First, blend the shallots, vinegar, yogurt, honey, mustard, salt, & pepper until smooth. Add the olive oil and blend until the dressing is emulsified.

02 CARROT RIBBONS

Next, use a vegetable peeler to peel the carrots into long ribbons. To keep them fresh, cover the ribbons with a wet paper towel or linen!

03 TOSS

Next, add the carrot ribbons to a large bowl. Add half of the dressing and toss. Taste and add more dressing if necessary.

04 GARNISH

Place the ribbon carrot salad on a large platter.

Then, garnish with pistachios, feta, and parsley. Enjoy immediately!

TIP!

Don't throw away the leftover carrots after you make the ribbons! Chop them into sticks for snacks, or dice them for stews & soups.

- GRILLED OR ROASTED CHICKEN - GRILLED TRI-TIP OR PAN ROASTED STEAK - RIBS, PULLED PORK, OR BBQ BRISKET

If you don't want to ribbon the carrots, no problem! You can make shredded carrot salad instead. Just use a grater or food processor grater attachment to prep the carrots.
