Peachy Pink Gin Spritz with Raspberries

This peachy pink gin spritz tastes like summertime in a glass. It has has pink gin, raspberry liqueur, peach nectar, lemon, and Prosecco for a ridiculously refreshing and bubbly drink. Mix this 5-minute cocktail up in a pitcher (or a wine glass) to share with friends at BBQs, dinner parties, aperitivo, and everything in-between!

Ingredients

Pitcher Spritz

  • 16 ounces peach nectar (480 milliliters)
  • 2 ounces fresh lemon juice (60 milliliters)
  • 4 ounces raspberry liqueur (120 milliliters)
  • 8 ounces Empress 1908 Elderflower Rose Gin (240 milliliters)
  • 16 ounces brut Prosecco (480 milliliters)
  • 8 ounces sparkling water (240 milliliters)
  • Sliced peaches & raspberries, for garnish

Single Cocktail

  • 2 ounces peach nectar (60 milliliters)
  • 1/4 ounce fresh lemon juice (8 milliliters)
  • 1/2 ounce raspberry liqueur (15 milliliters)
  • 1 ounce Empress 1908 Elderflower Rose Gin (30 milliliters)
  • 2 ounces brut Prosecco (60 milliliters)
  • 1 ounce sparkling water (30 milliliters)
  • Sliced peaches & raspberries, for garnish

Equipment

Instructions 

Pitcher Spritz

  • Add the peach nectar and fresh lemon juice to a large pitcher. Then, add the raspberry liqueur and Empress 1908 Elderflower Rose Gin.
  • Carefully pour the brut Prosecco and sparkling water into the pitcher. Gently stir the cocktail to mix it well. Add sliced peaches and raspberries.
  • Pour the cocktail over ice. Garnish with more sliced peaches and raspberries if desired. Enjoy!

Single Cocktail

  • Fill a wine glass with ice. Add the peach nectar, lemon juice, raspberry liqueur, and Empress 1908 Elderflower Rose Gin.
  • Stir the cocktail until it's chilled and well-mixed, about 15 seconds. Garnish with peach slices and raspberries and enjoy!

Notes

Look for peach nectar in the juice aisle of the grocery store. If you can't find nectar, you can also use peach juice from the refrigerated juice aisle instead.
To make a bellini spritz, use peach liqueur instead of raspberry. Just make sure you're using peach liqueur, not peach schnapps which has a higher ABV.
Use a nicer bottle of Prosecco. It will make a big difference in the quality of the cocktail.
Make sure to chill the ingredients beforehand. This will make sure the cocktail is nice and cold when you serve it.
To keep the pitcher cocktail cold, feel free to add frozen peach slices and raspberries to the drink. It will keep the cocktail chilled without watering it down.
Feel free to adjust the ingredients to your tastes! If you like a sweeter cocktail, use 2 1/2-3 ounces of peach nectar. For a tarter cocktail, add a 1/2 ounce of lemon juice. Like a stronger gin flavor? Just replace the raspberry liqueur with more gin!
