Simple Boursin and Roast Beef Crostini with Arugula

These boursin and roast beef crostini are a stunning (but uber easy) appetizer. They're piled with herby boursin cheese, tender roast beef, peppery arugula, and a sprinkling of fresh chives. And they come together in about 10 minutes - no cooking required. Make sure to bring these to your next holiday party or get together with friends!

Ingredients

  • 36 homemade crostini or store-bought
  • 1 recipe homemade boursin cheese or 1 wheel of store-bought boursin (150 grams)
  • 2 cups arugula (40 grams)
  • 1/2 pound thinly-sliced roast beef (228 grams)
  • 2 Tablespoons freshly-snipped chives (12 grams)

Instructions 

  • Spread each crostini with about 1/2 Tablespoon (7 grams) of boursin cheese. Add 2-3 arugula leaves on top of each toast.
  • Roll or fold pieces of roast beef into ribbons. Add a roll of roast beef on top of each crostini. Sprinkle the fresh chives over the top. Enjoy!

Notes

You can make these crostini a few hours in advance. Cover the platter and refrigerate the crostini for up to 3-4 hours.
I like to serve the crostini at room temperature cause it brings out all of the best flavors in the cheese. Just make them about 30 minutes before you're ready to serve.
I love serving these crostini with a good wine! Try a full-bodied red like Cabernet Sauvignon, Merlot, or Shiraz. If you like white wine, these would be great with Chardonnay or a dry Riesling.
