Easter dinner is my favorite time to bust out all the spring recipes! These are some of my favorites. The recipes are:  - Simple to make - Crowd-pleasers - Perfect for spring!

White lasagna with pesto & pancetta is where cozy meets fresh. This lasagna is cheesy, bright, creamy, & the perfect meal for serving a crowd.

Easter = carrots. And this raw carrot salad with feta, parsley, and shallot vinaigrette is fresh, easy, and delicious with any of your favorite main meals.

Lemony marinated mozzarella balls are a delicious, no-cook appetizer. Serve it with bread or add the mozzarella to a cheese board - so easy!

Short rib beef bourguignon is an elegant (but super easy!) dinner for a group. Enjoy this bourguignon with potatoes, rice, pasta, or crusty bread.

Everyone loves these smashed fingerling potatoes with garlic butter and rosemary! They're crispy on the outside, creamy on the inside, and full of flavor.

It's not Easter without deviled eggs! These spicy deviled eggs with fried shallots are a fun twist on the classic appetizer. Everyone loves them!

Braised pork ragù with gnocchi is a one-pot dinner that everyone will love! The pork is fall-apart tender for a rich, flavorful, and savory dinner.

Round out your dinner with a green salad with sherry shallot dressing. With honey and lemon, the dressing is citrusy, bright, & just a tad sweet.

French shallot soup with gruyère croutons is a light and elegant appetizer (or main meal!) for guests. Bonus - you can even make this recipe in advance!

Skip the store-bought rolls this year. These garlic butter dinner rolls are so much better. And you can use the leftovers for ham & cheese sandwiches!
