Easy Blueberry Lemon Vodka Spritz Cocktails

These blueberry lemon vodka spritz cocktails are made in a big pitcher for a simple, 5-minute drink for a crowd. With juicy berries, fresh lemons, vodka, and sparkling lemonade, this drink is tart, bright, and lovely for sipping on the patio. It's a refreshing drink for BBQs, parties, and summer holidays!

Ingredients

Pitcher drink

  • 2 cups blueberries (300 grams)
  • 2 lemons, thinly sliced and de-seeded (plus more for garnish)
  • 4 ounces simple syrup (120 milliliters)
  • 16 ounces vodka (480 milliliters)
  • 32 ounces sparkling lemonade, or lemon sparkling water (960 milliliters)
  • Rosemary, for garnish (optional)

Single cocktail

  • 1/4 cup blueberries (40 grams)
  • 2 slices of lemon, de-seeded (plus more for garnish)
  • 1/2 ounce simple syrup (15 milliliters)
  • 2 ounces vodka (60 milliliters)
  • 4 ounces sparkling lemonade, or lemon sparkling water (120 milliliters)
  • Sprig of rosemary, for garnish (optional)

Equipment

  • Large pitcher
  • Muddler (or wood spoon)

Instructions 

Pitcher cocktail

  • In a pitcher, muddle the blueberries, lemons, and simple syrup until the lemons release their oils and about half of the blueberries are smashed. If you don't have a large muddler, a big wooden spoon works great!
  • Add the vodka and stir the cocktail very well. Cover and place the pitcher in the fridge until you are ready to serve the drink, up to 1 day.
  • Right before serving, stir in the sparkling lemonade or lemon sparkling water. Pour the drink over ice and garnish with lemon slices and sprigs of rosemary. Enjoy!

Single cocktail

  • In a glass, muddle the blueberries, lemon slices, and simple syrup until the lemons release their oils and about half of the blueberries are smashed.
  • Add the vodka to the glass and stir well. Fill the glass with ice. Top with the sparkling lemonade or lemon sparkling water. Garnish with a lemon slice and a sprig of rosemary. Enjoy!

Notes

Most simple syrup recipes are 1:1, but I like a 2:1 ratio. To make rich simple syrup, combine 1 cup of sugar with 1/2 cup water. Bring it to a boil for 1-2 minutes & cool. Easy!
Frozen blueberries are so lovely in this cocktail. Just make sure to let them thaw before you muddle them!
Muddle the lemon slices just until they release the oils. Don't go crazy or it could make the cocktail bitter!
For a less sweet cocktail, use lemon sparkling water instead of sparkling lemonade. Or, try half lemonade, half sparkling water!
Make sure you add the sparkling lemonade right before serving. Otherwise it will lose fizziness as the drink sits in the fridge!
Try expressing the oils from the herbs for extra flavor. To express the oils, place a sprig of rosemary, thyme, etc. in the palm of your hand. Then, clap your hands together. The gentle pressure on the leaves will pull out all the flavorful oils!
Add frozen berries & lemon slices to keep this drink cold for a party. You can even use frozen lemonade ice cubes!
