How gorgeous are these prosciutto wrapped dates? I’m not kidding, this is the easiest elegant appetizer situation and all you need is 3 ingredients – Medjool dates, blue cheese, and prosciutto! They are sweet, savory, creamy, and amazing with a drizzle of honey or balsamic glaze if you feel so inclined.

I am currently recovering from my 30th birthday weekend. Friends, it was so 30s. I saw Death Cab for Cutie, didn’t cook one single time (!), went to the spa, drank wine, read multiple books, and watched 90s movies during a thunderstorm. Also, I woke up with a sore wrist but literally didn’t do anything? Lol. Is this a metaphor for 30?

That said, the end of my birthday usually means it’s time to start making holiday recipes. I KNOW. Are you ready? Idk if I’m ready. Either way, I decided to kick off this year’s holiday situation with a gentle approach. A super simple, 3-ingredient, make-ahead, barely-cooked app that you can customize with whatever cheese you have in your fridge rn.

I used to make stuffed dates all the time when I was in culinary school, I mean they’re a classic for a reason. But recently, they’ve had a resurgence on TikTok and I’m so here for it! The jammy, sweet dates are already ridiculously good with funky blue cheese. But like my burrata crostini and these summery melon skewers, I decided to add a little prosciutto for some salty, umami flavor!

Use thinly-sliced prosciutto

If you want the prosciutto to crisp up a bit, it’s important to make sure it’s very thinly-sliced. I like to grab prosciutto from the deli counter because I can always ask for a thin cut. It also just tastes more fresh! If all you can find is pre-packaged though, try to only wrap the slices around the dates once or it won’t get crispy!

How to pit dates

Then, use your fingers to gently open the date up. You should see a pit right in the center.

Remove the date with your fingers or the tip of a knife. Now you’re ready to add blue cheese!

Gently press the sides so the cheese doesn’t ooze out!

Next, roll each date in a thin slice of prosciutto.

If you’re not a blue cheese lover, basically any soft cheese will work in this recipe. Try goat cheese, homemade boursin, or brie instead!

Bake the dates at 400°F (204°C) for 10-12 minutes, until the prosciutto is lightly crisp.

If you want to skip the baking step for a no-cook app, you totally can! These still taste amazing as-is. 🙂

Make ahead tips

The raw dates hold up super well in the fridge, so you can definitely refrigerate them (covered!) for 2-3 days. I usually prep them the night before and bake the dates right before my friends come over!

Baked Prosciutto Wrapped Dates with Blue Cheese

How gorgeous are these prosciutto wrapped dates? I'm not kidding, this is the easiest elegant appetizer situation and all you need is 3 ingredients – Medjool dates, blue cheese, and prosciutto! They are sweet, savory, and a little funky thanks to the blue cheese filling. And, they come together in under 30 minutes!

Ingredients

  • 4 ounces soft blue cheese, such as Danish blue (114 grams)
  • 3 ounces thinly-sliced prosciutto (85 grams)
  • 24 Medjool dates
  • Honey or balsamic glaze, for drizzling (optional)

Instructions 

  • Preheat the oven to 400°F (204°C). Line a sheet pan with parchment paper.
  • Slice the blue cheese into 24 thin, 1-inch chunks. (You want them to be roughly the size of the insides of the dates, but it doesn't have to be perfect.) Then, slice each piece of prosciutto length-wise into 3-4 long strips. You should have 24 strips of prosciutto in total.
  • If your dates are not pitted, you will need to pit them before making this recipe. Working one date at a time, slice each date through the middle lengthwise being sure not to cut all the way through. Gently pull the sides apart until you see the pit. Then, use your fingers or the tip of the knife to remove the pit. Repeat with the remaining dates.
  • Stuff each date with a piece of blue cheese. Make sure the blue cheese is packed in snuggly so it doesn't melt out. I like to gently press the sides of the dates to help the blue cheese 'stick'.
  • Then, roll each date in a slice of prosciutto. Tuck the ends of the prosciutto under the bottom of the date, or use a toothpick to secure the prosciutto if needed.
  • Place the dates on the prepared sheet pan, leaving a bit of space between each so the prosciutto crisps up. Bake the dates for 10-12 minutes, until the cheese is warmed through and the prosciutto is slightly crispy. It will crisp up more as it cools.
  • Transfer the dates to a platter. Serve them as-is or drizzle with dates with honey or balsamic glaze, if desired. Enjoy warm!

Notes

I like Medjool dates for this recipe because they are sweeter and bigger than other types of dates. You can buy them pitted, but I like to do it myself so they’re extra jammy.
If you’re not a blue cheese fan, feel free to use goat cheese, homemade boursin cheese, brie, or any other soft cheese you like.
To make sure the prosciutto crisps up, you’ll want thinly-sliced prosciutto. I usually buy it from the deli counter so it’s thin and super fresh.
For a no-cook app, feel free to serve these unbaked. They’re delicious either way!
Sometimes, I like to add a sprinkle of pistachios for crunch.
