I love a super easy appetizer and this brie and jam in puff pastry (a.k.a. brie en croûte) is just that. All you need is brie cheese, frozen pastry, and your favorite preserves for a melty, gooey, sweet, savory, and flaky snack. Omggg it’s so good! And it’s a huge crowd-pleaser so it’ll be gone in minutes.

It’s been a minute since I shared a puff pastry appetizer! But now that we’re entering prime dinner party season (and willing to turn the oven on season), I’m back with one of my all time favorites.

Brie en croûte is simply brie wrapped up in flaky pastry. I’ve been making it for a million years, ever since I was in pastry school. But now instead of homemade pastry, I just save myself some stress and buy it from the freezer aisle lol.

Something that I extra love about this recipe is that you can use whatever ingredients you like or already have on hand. I like to add a scoop of jam (fig, raspberry, chili, whatever fits the season) but it would also be lovely with a drizzle of honey and some walnuts or pecans.

You know I love a brie appetizer whether it’s brûléed brie apple crostini or this uber creamy whipped brie. But this one literally comes together with 5 minutes of work so it’s great if you need a hands-off app. Give it a try and lmk what you think!

3 things you’ll need

The key to this recipe is to pick a good wheel of brie cheese. You can use traditional brie or a rich triple creme, just make sure it’s something nice so this app tastes amazing and creamy. Then, grab some puff pastry from the freezer aisle. I like all-butter but use your fave! Lastly, you’ll need some jam. I used fig in this recipe but I’ve also tried pepper jelly, raspberry jam, and apricot preserves, and they’re all good.

If you want that shiny pastry, you’ll also need an egg for egg wash! But, it’s totally optional, it won’t affect the taste whatsoever.

Lastly, bake at 400°F (204°C) for 35-40 minutes, until golden.

Make sure to seal the pastry well or it’ll pop open in the oven. If it won’t stick, use a little water or egg wash to seal the edges.

Serving ideas

This brie is good with all kinds of things! But if you’re using a fruit jam, pair it with fresh or dried fruit (grapes, apples, berries, etc.), crackers, homemade crostini, or even chocolate. For savory preserves like red pepper jelly or caramelized onion jam, go with olives, seasoned nuts, crusty bread, or whatever else you like.

Prep in advance

To make this recipe ahead of time, just wrap the cheese in the pastry, cover, and refrigerate for up to 1 day. Then, just bake it whenever you’re ready!

Baked Brie and Jam in Puff Pastry

This brie and jam wrapped in puff pastry (a.k.a. brie en croûte) is super easy, quick, and customizable! All you need is frozen puff pastry, brie cheese, and your favorite preserves. Even better, it takes about 5 minutes of actual prep. Serve the brie with fruit, crackers, and bread for a delicious app that everyone will love!

Ingredients

  • 1 sheet of puff pastry, preferably all-butter (9 ounces/250 grams)
  • All purpose flour, if needed
  • 8 ounce wheel of brie cheese (226 grams)
  • 1/2 cup jam of choice (160 grams)
  • 1 egg, for egg wash – optional

Equipment

  • Rolling Pin
  • 1 sheet pan

Instructions 

  • Preheat the oven to 400°F (204°C). Line a sheet pan with parchment paper and set it aside.
  • Using a rolling pin, roll the sheet of puff pastry into an 11×11-inch square. (Don't worry if it's not perfect, you just want it to be large enough to cover the brie completely.) If the pastry is sticking, dust the surface with a little all purpose flour.
  • Place the wheel of brie in the center of the puff pastry square. Spread the preserves on top of the brie.
  • Fold the puff pastry corners around the brie, sealing the pastry very well so it doesn't pop open in the oven. Use your hands to press the edges to make it look a little neater. (It doesn't have to be perfect, this app is supposed to be rustic.) If the puff pastry has warmed up, pop the brie in the fridge for 10-30 minutes until it's nice and cold. Cold pastry is key to flaky layers!
  • If you want a shiny crust, whisk an egg with 1 Tablespoon of water. Use a pastry brush to brush the egg wash on the outside of the pastry, getting it into all the nooks and crannies.
  • Bake the brie for 35-40 minutes, until the pastry is deep golden-brown. Let it cool for 5-10 minutes so the cheese has a little bit of time to set up. Serve the baked brie with apples, grapes, crackers, bread, or anything else you like.

Notes

Pick a good brie for the best flavor and texture. I like Marin French but any of your favorites will do.
I’ve tried this recipe with fig jam, red pepper jelly, raspberry jam, and more. All of them are good!
Feel free to add a sprinkle of nuts or herbs like thyme and rosemary.
Make sure to seal the pastry well or it’ll pop open in the oven. If it won’t stick, use a little water or egg wash to seal the edges.
The egg wash step is totally optional. It just makes the pastry look shiny but won’t affect the taste.
