It’s the best balance of sweet, savory, and decadent, especially with a side of crisp crackers. I love serving this easy app for cozy dinner parties, get togethers with the girls, and of course, all the holidays.

I’m happy to report that I have finally been able to drag myself out of bed and become a real person again. A couple of weeks ago, I got sooo sick. Absolutely cooked. Baddie DOWN.

But on the bright side, it gave me an excuse to couch rot, wear sweatpants, drink coffee all day, and test lots of autumn recipes. So it wasn’t a total bust. I came up with all kinds of amazing recipes, but I think this brie is one of my favorites!

Imagine if a caramel apple was also a gooey cheese situation. That’s what we have here. If you’ve ever made my brûléed brie and apple crostini, you know this is one of my favorite pairings! But like my whipped brie, it also has maple syrup, pecans, and cinnamon.

P.S. as a culinary school graduate, I always use a good brie for this recipe because it makes a huge difference in the overall taste and texture. My go-to is Marin French traditional or triple creme but use your favorite. Also, I like to leave this recipe as-is to let the cheese shine, but feel free to wrap it in puff pastry like in my puff pastry baked brie recipe!

Best apples to use

Make sure to pick apples that are crisp, sweet, and a little tart. My favorites are either Honeycrisp or Pink Lady apples. If you like a tarter apple, Granny Smith would also be good. Feel free to use a mix for different flavors and colors though!

Other than that, you’ll need a nice wheel of brie, unsalted butter, pecans, maple syrup, brown sugar, cinnamon, fresh thyme, and Kosher salt. If you want, you can also swap the maple syrup for honey!

How to make the brie

Start by baking the brie at 350°F (177°C) for 15-20 minutes.

Meanwhile, chop the pecans & toast them in a big skillet.

Then, melt the butter and sauté the apples until they’re softened.

Bring the apples to a bubble for 1-2 minutes & add the pecans.

Lastly, top the baked brie with the caramel apples & thyme. Enjoy!

You want to cook the apples until they’re crisp-tender. If you cook them for too long, they will get mushy.

Reheating leftovers

Honestly, this brie is best fresh, but if you have leftovers, you can store them in an airtight container in the fridge for 2-3 days. To reheat the leftovers, spoon them into a greased baking dish & bake at 350°F (177°C) for 10-15 minutes, until hot.

30 Minute Apple Baked Brie with Pecans

This apple baked brie with maple syrup, cinnamon, and pecans tastes just like autumn! It has just a few ingredients and takes less than 30 minutes to bake up. Serve the brie with crackers, crusty bread, grapes, and more – you can't go wrong. It's an amazing appetizer for fall dinner parties and holidays!

Ingredients

  • 8 ounce wheel of brie cheese (226 grams)
  • 1/4 cup pecans, roughly chopped (30 grams)
  • 2 Tablespoons unsalted butter (30 grams)
  • 1 large apple, cored & thinly sliced (1 1/3 cups/100 grams)
  • 2 Tablespoons packed brown sugar, light or dark (30 grams)
  • 2 Tablespoons pure maple syrup (30 milliliters)
  • 1/2 teaspoon apple pie spice
  • Kosher salt, to taste
  • Fresh thyme, for garnish

Equipment

Instructions 

  • Preheat the oven to 350°F (177°C). Place the wheel of brie in a small cast iron skillet or baking dish. Bake for 15-20 minutes, until the cheese is hot and melty throughout.
  • Meanwhile, heat a large skillet over medium heat. Add the pecans and cook until toasty, about 1-2 minutes. Spoon the pecans into a small bowl and return the pan to the heat.
  • Melt the butter in the skillet. Then, add the sliced apples and sauté the apples until they're crisp-tender. Add the brown sugar, maple syrup, apple pie spice, and a big pinch of salt. Bring the mixture to a light simmer and cook for 1-2 minutes, until the caramel is slightly thickened. Stir the pecans into the caramelized apple topping.
  • Once the brie is fully baked, spoon the pecan-apple mixture on top. Garnish the brie with fresh thyme. Enjoy with crackers, crusty bread, fruit, etc.!

Notes
